Shrimp and Veggie Brown Rice

on:This is one of those throw together dinners but man oh man was it good I had to share!
I started with sauteed onions( big pieces) and mushrooms( whatever is on sale) then I added pineapples and peeled shrimp for the last few seconds just enough to warm them a little. Shrimp cooks very fast so I don’t like to cook them too much and make them chewy so be careful! I put a tbsp or two of worstshire sauce and topped a plate of brown rice with it and called it a night! So easy yet so healthy and delicious a nice, light, summertime dinner in ten minutes or less!! Mr.Fit was in heaven. We haven’t introduced Funky to seafood yet but she will be two soon so we will try then.
So this is basically the same thing….
Just put it all on a stick with chicken and grill! VIOLA…..Another fantasioc dinner. I also made chinese coleslaw ( recipe in older post) with cut up cantaloupe ( Funky’s favorite) and a mommy mai tai as I call it:)
Orange juice
pinepapple juice
Malibu run
cherry vidka
cranberry juice
splash of lime
grenadine
YES it is very fruity but the best for a sweet tooth!
Chicken Fajitias

on:In order not to break the bank and feed Mr.Fit I have to find ways to make sure our meals have a lot of meat and I don’t mean a pound I mean six pounds. He is not big on carbs so bread and tortillas do not matter so this dish was perfect! I used about 5 boneless chicken breats and 2 steaks along with fresh peppers of all colors, mushrooms, onions, and a really yummy fajita saucer I found at Target on sale! I love a bargain. Viola.. a huge meaty meal that was very easy and fresh to make.
Now I like to add cheese and sour cream in a nice whole wheat tortilla but if you are the big guy type you can just throw a ton on a plate. It was so delicious and really satisfying! Funky even enjoyed it too! She likes to just pick out the veggies but every once in a while I can get her to eat meat. As long as she has something to dip it in she is a dipper!!
I was very careful this time not to chop my finger half off for those of you that follow my blog know I have had a bad experience witg kitchen knifes. HAHA

Best Hamburgers EVER!

on:I am completely over chicken, we eat it allll the time and ground beef was on sale YAY. I decided to try make hamburgers once again because everytime they fall apart and it is an epic fail. I finally nailed it this time and they were juicy, stayed together, and very flavorful! Mr.Fit ate about six of them so I know I made his day!
I started with two pounds of the very very lean ground meat. I think this is why I can never get them to stick. Then I mixed in a handful of sauteed sweet onions, mushrooms, and spinach. I put them in a pan with olive oil for about five minutes until the spinach cooked down. I mixed this in the hamburger along with one egg white, and one piece of whole grain toast crumbled up to form a breadcrumb. I added pepper, old bay ( easier to find in Maryland then anywhere else) and garlic salt. Made into six patties, yes they are huge but I have to cook for a huge guy so thats what works for us:) Bronwed on each side for about 5-7 minutes and VIOLA!!!
I did cook some turkey bacon and added that to the sandwich but it was totally the burger that made it! So YUMMY
I love when Mr.Fit watches me cook and is like do you know what your doing?? Yes Hunny just because I do not measure a darn thing and add a bunch of random ingrediants doesn’t mean I don’t know what I’m doing hahahaha. It was so perfect when it turned out amazing and I had to write it down real quick so I wouldn’t forget.
